A Peek into my Philosophy
Scotland truly has a natural larder that keeps giving. I enjoy the changes of the seasons, using fresh, local and sustainable ingredients that are in season. It allows me to create contemporary menus with simplistic elegance. Living in rural Perthshire affords me the luxury to have access to an array of natural wild foods, as well as local producers that follow ethical, sustainable and responsible practises.
My obsession with finding wild, edible foods, and the sourcing of local produce and ingredients, has provided so much pleasure over the years. Cooking with seasonal and local ingredients gives one a sense of pride. Not only are we supporting our amazing, local producers and suppliers, we also enjoy and celebrate the bounty nature provides us with.
Cutting food miles and food waste is everyone’s responsibility. Heading towards a greener future, if we all do a little, we can achieve a lot. Not only does food tastes better when in season, it also provides the body with the vital nutrition it requires. And I believe using local foods that are in season, from local suppliers and nature, is exactly the right thing to do.
